Technological phase end-delivery represents the most expensive activity of postal traffic. By identifying user requirements and separating it as a distinguished holistic system and process it is possible to identify factors which affect efficiency and effectiveness regarding handing over and delivery of postal items. End-delivery has decisive effect on quality beacuse as a service subsystem directly represents postal service to end users. Postal services are performed by using public or autonomous postal network. The nitrite content in domestic and foreign cooked sausages from the Serbian market
The nitrite content (expressed as NaNO2) was measured in 236 samples of different types of domestic and foreign cooked sausages from the Serbian market, according to standard ISO procedure. The highest content of nitrite (expressed as NaNO2) was found in fine comminuted cooked sausages from foreign producers. Similarly, the coarse comminuted cooked sausages from foreign producers contained higher nitrite compared to domestically produced cooked sausages. According to National and EU Regulations, the maximum allowed nitrate content (expressed as NaNO2) is 150 mg/kg. All tested cooked sausages had nitrite levels below the regulatory limits set by National Regulation and Regulation (EC) No. 601/2014, but the highest nitrite contents were found in cooked sausages from foreign producers
Postupak izrade polimernog kalupa za ispitivanje na istezanje biokompozitnih materijala
The manufacturing and application of biocomposites are remarkable achievements in replacing conventional non-biodegradable materials. In general, biocomposites are made up of biopolymers and bio-based reinforcing agents. Biofibres are also the main constituents of biocomposites, which are generated from biological entities such as crop fibres (cotton, flax, mycelium of fungi, hemp), recycled wood, wastepaper, agro-based by-products or regenerated cellulose fibre. In this paper, a mould intended for biocomposites based on mycelium and an adequate substrate is tested. The primary purpose of the mould is to bring the loose natural material into a solid preparation following the standards ASTM D7250 and ASTM D1037, which include testing the technologically prepared and hardened sample for tensile and pressure. Development and moulding of biocomposite are the technological processes of drying after sowing mycelium so that a variant of the mould with a perforated upper part was used to harden the samples thoroughly. In the mould, realization is used PLA thermoplastic filaments. Mould was made as an assembly of two parts, and its shape is like a dog bone, according to the mentioned standards. This polymer enclosure is helpful for other biocomposite structures (a mixture of different fungi species and adequate substrates).Proizvodnja i primena biokompozita je znaÄajno doprinela smanjenju upotrebe nebiorazgradivih materijala. U opÅ”tem smislu, biokompoziti se sastoje od biorazgradivih prirodnih polimera (biopolimera) i ojaÄavajuÄe faze-biovlakana. Biovlakna su glavni sastojci ovih materijala i mogu biti razliÄitog prirodnog porekla (pamuk, lan, konoplja, micelije gljiva, reciklirano drvo, agroproizvodi ili regenerisana celulozna vlakna). U ovom radu, testiran je i razvijen kalup za biokompozite na bazi micelijuma i odgovarajuÄeg supstrata (pÅ”eniÄne slame). Osnovna namena kalupa je priprema i oÄvrÅ”Äavanje bio materijala da bi bilo omuguÄeno ispitivanje u skladu sa standardima ASTM D7250 i ASTM D1037, koji su namenjeni ispitivanju uzoraka na istezanje i pritisak. Izrada i
oblikovanje biokompozita predstavljaju tehnoloÅ”ke postupke koji se sprovode u cilju suÅ”enja i smanjenja procenta vlage nakon zasejavanja, pri Äemu je gornji deo perforiran zbog isparavanja i Å”to boljeg oÄvrÅ”Äavanja uzoraka. Za proizvodnju kalupa upotrebljen je PLA termoplastiÄni filament.
Kalup je izraÄen kao dvodelni sklop, oblika ādog boneā u skladu sa pomenutim standardima.
Ovako pripremljen i sklopljen kalup je moguÄe primeniti i za ispitivanje ostalih biokompozitnih
struktura (meÅ”avina razliÄitih vrsta fungi i odgovarajuÄih supstrata)

U okviru ovog rada navode se rezultati sprovedenih istraživanja na ÄetvorogodiÅ”njem projektu TR35007 koji zajedniÄki realizuju MaÅ”inski fakultet Univerziteta u Beogradu, Fakultet tehniÄkih nauka Univerziteta u Novom Sadu i kompanija Ikarbus iz Beograda. Ovaj projekat finansijskih podržava Ministarstvo prosvete i nauke u okviru ÄetovorogodiÅ”njeg ciklusa istraživaÄkih projekata za tehnoloÅ”ki razvoj, od 2011. do 2014. godine. Prvo se navode istraživaÄki okvir projekta, osnovni ciljevi koji postavljeni pred istraživaÄki tim i organizacija projekta koja je izvedena po modelu radnih paketa. U drugom delu rada navode se osnovni rezultati ostvaranih u prvoj istraživaÄkoj godini, sa odgovarajuÄim opisom i osnovnim detaljima tehniÄke i organizacione prirode

White and honey Chlorella vulgaris: Sustainable ingredients with the potential to improve nutritional value of pork frankfurters without compromising quality
This study aimed to evaluate the effect of the chlorophyll-deficient microalgae mutants, honey (yellow) and white Chlorella vulgaris, (3%) on the nutritional, physicochemical, microbiological, and sensory characteristics of frankfurters. The presence of microalgae resulted in increased PUFA content and higher PUFA/SFA ratio, but lower n-6/n-3 ratio and lipid indices (PĀ <Ā 0.05). C. vulgaris inclusion in frankfurters increased (PĀ <Ā 0.05) Na, K, Ca, P, and Zn and improved the Na/K ratio, but lowered Mn, and in the case of white C. vulgaris, Cu content, compared to the control. The higher protein content decreased water release from emulsions elaborated with microalgae. White C. vulgaris inclusion decreased cohesiveness and springiness of the frankfurters. Due to the presence of pigment, microalgae inclusion led to a decrease in redness and an increase in yellowness of frankfurters. The presence of microalgae resulted in lower (PĀ <Ā 0.05) bacterial counts and did not affect TBARs during storage. The addition of microalgae in frankfurters produced acceptable sensory characteristics but resulted in lower scores compared to reference products
Nutritional properties of frankfurters with added chlorophyll-deficient Chlorella vulgaris mutants
Microalgae have been proven to be a promising functional and sustainable ingredient in different food matrices, including some meat products [1,2,3,4,5,6]. However, the coloring of meat products containing microalgae Spirulina maxima and Chlorella vulgaris in a dark green could lead to consumers` rejection of these products. To overcome the color barrier, we used white and yellow chlorophyll-deficient C. vulgaris mutants, commercially available (Honey Chlorella), in designing acceptable products. The study aimed to analyze the nutritional composition (chemical, fatty, amino acid, and mineral composition) of pork frankfurters enriched with 3% of yellow and white C. vulgaris. The inclusion of these microalgae resulted in a significant (P < 0.05) increase in protein (0.8- 0.85%) and ash, while moisture and fat content decreased. Following current Regulation (EC) No 1924/2006 and the amended Commission Regulation (EU) No 1047/2012, the Ėhigh proteinĖ content claims can be assumed for microalgae enriched frankfurters. Carbohydrates increased with microalgae addition due to the increase in fibers. The sum of total essential amino acids and essential/nonessential amino acid ratio was higher (P < 0.05) in groups containing microalgae. In addition, white C. vulgaris samples had better Lys:Arg ratio compared to the control and honey C. vulgaris groups. Frankfurters with microalgae had significantly more (P < 0.05) n-3 PUFAs, mainly alfa-linolenic, gamma-linolenic, and eicosatrienoic acid, along with significantly lower amounts (P < 0.05) of SFAs, mainly palmitic and stearic acid. C. vulgaris mutants resulted in increased total PUFA, lower PUFA/SFA ratio, nā6/nā3 ratios, lower atherogenic index (AI), and thrombogenicity index (IT) compared to reference frankfurters. C. vulgaris inclusion in formulations increased (P < 0.05) Na, K, Ca, P and Zn, but lowered Mn compared to control frankfurters. In addition, frankfurters fortified with white C. vulgaris resulted in higher iron content and lower copper content compared to the control. Moreover, microalgae enrichment lowered the Na/K ratio by 34.74% and 16.42%, respectively, resulting in a significantly better ratio closer to the recommended one. Using microalgae to create innovative meat products can bring potential health benefits to consumers due to the enhanced nutritional profile of these products.Book of Abstract
